Reading Week Holiday

So we've got the week of Valentine's Day off so my course-mate Susan & I decided to go for a mini holiday during that week - somewhere a little sunnier & warmer than London - Look at what we got for less than $400.00/person (including flight and B&B for four nights)

4* Estival Park - 4 nights at bed & breakfast

Location: Costa Dorada

Costa Dorada is Spain's 'Golden Coast', stretching from Barcelona to south of Tarragona in the Catalonia region. Visit the vibrant, historic city of Barcelona, with its famoushalf finishedd Gothic cathedral by Gaudi and the pedestrianised Las Ramblas with its stalls and cafes. Or explore the Roman and Gothic town of Tarragona. With the option of hire car, taxi or the train from La Pineda you will be able to explore the locality with great ease. Serious shoppers should head to Barcelona with the wide choice of modern department stores and designer shops, to stalls on Las Ramblas and the Els Encants' open air market.

Now if I can just remember some of the Spanish that Kathy & I learned during our "honeymoon" in Costa Rica last January!!! (local guides asked if "we were on honeymoon" since we weren't sisters, after we tried to explain they just smiled, laughed a bit & said, "it's okay to be on honeymoon")

Of course this will not compare to the Saranac Lake Winter Carnival parade & Lions Club chili sale that I will miss, but there is always 2007, right?!?!?!?

4 nights in Spain should be a nice break from the stress of uni & London!! Just have to finish off our grant proposal & presentation for this Thursday & Fridayrespectivelyy.

So tonight Susan, my roomie (or should I say flatmate) Louise, & I made dinner - it was sooooo good, see photos.

avacado salad with balsamic vinegar, black pepper & a little sea salt

whole wheat pasta with chicken parm & roasted carrots, onions, broccoli, red & green peppers w/ balsamic vinegar, olive oil &Italiann spices (we had tomatosauce inn aseparatee bowl, see below, we all added itseparatelyy since not everyone wanted sauce)

Susan (left) and Louise (right) ready to eat!!
